Dreamstation suddenly too loud and with too much pressure

You can adjust both the ramp, minimum and maximum pressures, as well as other parameters, in the clinician menu of your machine.

I just came across this, and I am glad I did; I had the same problem with my new DreamStation, and after trying several settings, I compared it with my old SystemOne, and noticed the TubeType was not set correctly. I matched the Tube type and it's all well now.
