Chilling the hose in ice is where I'd expect the water inside the hose is coming from. Warm humid air flowing across a cold surface is exactly how a dehumidifier works.
Also, the humidifier works by warming the water compared to ambient - putting ice in just causes the humidifier to turn up the BTU's to warm up the ice water faster.
If you want cooler air, then cool the entire room.
As for hose management, and the leaks and discomfort a poorly managed hose causes, there needs to be a law that a hose control system be a required accessory with any kit. I use pipe cleaners and large binder clips to keep the hose where it needs to be. Binder clips where I need the hose attached to headboard, table, pillow, etc. Pipe cleaners to hold the hose to the clips.
Once the hose is taken out of the battle, nights get easier.
