That "clapping" sound is most likely rain-out, where the humidity setting is too high for the hose temperature. Heated hoses can be adjusted to compensate for this. Alternatively, you can get a hose cover to insulate it (assuming the ambient temperature in the bedroom is relatively low). And to answer the second question, those are real leaks - the Oscar chart only shows the excess over and above the built-in leak through the vent holes. So, in responses to increased pressure, you are either mouth breathing or there is some air escape around the contact between the mask and your nose.

I put the humidity back down to the previous levels and the clapping sound disappeared.
I'm not sure if it is possible, but my O2 values also looked better since then. Anyone know if this can be correlated? This brings me to the last 2 days. I switched for these 2 nights to the medium nasal pillows for my N30i mask. I thought they might fit better, but also looks like I had a lot of large leaks, so I might try switching back to the small ones. Ever since increasing the pressure 4-7 to 7-11 I'm getting large leaks so I assume it's because of the pressure my mouth opens during the night. I might look into a mouth strap at this point to see if it helps. As for my 2 nights, do other people also get these wild swings with no setting changes? If I have to believe my O2 saturation meter (Wellue O2 ring) my last night was horrible while I didn't feel particularly bad throughout the day. I would think that these O2 drops would correlate with large leaks since the nPAP wouldn't be able to help at that point but it just happened throughout the entire night. It's been at least +1 week since my O2 chart looked this bad, with all those showing 0 for drops in the Viahealth app. The only other thing I could think off would be an issue with the sensor but an issue with the sensor for the whole night and only one night would also seem strange to me. If anyone has any insight into what could be happening.

From experience wearing an o2 ring nightly your o2 results are pretty good actually - you don't want to be living in < 90% (less than 92% preferably) but overall not bad. In this case, some of the drops correlate with the dark blue hypopnea events which is not uncommon and can be addressed. For me to get consistently great sp02 data I nasal rinse twice a day and use flonase before bed plus turn the temperature up on the heated hose so I'm not getting cool air shoved into my nose all night narrowing my sinuses.
Your focus in the near term should be solving your mouth leak over the next couple of nights. Then, we can have a clear signal on what's going on with your therapy and I think you could use a little more pressure.
