Forgive my noob question... but does this setting actually change how pressure is delivered?
I've definitely switched from a nasal mask to full face mask without changing my machine's settings. I naively assumed that this setting was just used to store the mask type when looking back at the data in a program like OSCAR.
Out of curiosity, is there a resource that explains the difference between the three mask modes?

From experimentation, it appears to deal with the difference in the volumetric area of each mask type. For lack of a better term, a full face mask (FFM) has more compressibility area as opposed a nasal pillow. This would equate to a pillow mask exhibiting a more immediate response to a pressure change versus the FFM. The Nasal mask would be somewhere in between the two.

Lankyleft in a video said that any mask that covers the mouth and nose is a full face mask. Both the f20 and f30 cover both the nose and mouth. Therefore, both the f20 and f30 are classified as full face masks. The p10 covers only the nostrils and so is considered a nasal pillow.

A nasal mask covers the nose only.
bonjour summed it up nicely for you:
F = Full Face (Mouth and Nose)
N = Nasal (Over the nose)
P = Pillow Mask (pillows Under the nose, nor in the nose)

Some nasal masks require nasal setting, but this newer N30i like the one I've got requires pillows as a setting, according to ResMed. As mentioned, ResMed clues you to type by the model name F, N, or P. It's best to look at the info on the mask package as well.
