I just took a sneak peek at the .rtfd, nice job! That should help some current/future Mac users.....

I'd like to add another TODO to the script:
# 3. Add -verbose=3 to macdeployqt,  as deploying takes time where nothing seems to happen. I cannot find where to put this in the script...

And you should make the explanation more generic, mine are:
Executable: /Users/arieklerk/Developer/OSCAR-code/oscar/scripts/create_dmg
Arguments: OSCAR OSCAR.app /Users/arieklerk/Developer/OSCAR-code/Building/MacOS/README.rtfd
Working directory: /Users/arieklerk/Developer/OSCAR-code/build-oscar-Desktop_Qt_5_12_5_clang_64bit-Release

When you run macdeployqt from the command-line, you do see a "......." progressing as it writes. Does it not do that when you run it from Qt Creator?

Also, how/where did you set the QT_BIN environment variable? I don't see it in your screenshot.
