I am in EST zone, which appears to be +4 GMT. If I want to change that on my airsense 11 it says I have to erase all data. Is that ok?

Yes!  I would make a backup of its contents or make sure you have imported the latest data into OSCAR before resetting it.

I import my O2 ring data into OSCAR daily. I can also copy the contents of the card. Once done, am I good to reset and is the +4 GMT setting correct for Eastern time to your knowledge?

Will it merely wipe the data on the card or also clear all my settings on the machine?
