Wanting additional insight on what might be causing me to be so tired
Originally tried using a CPAP back in 2017 and was unable to keep compliance. After a septoplasty and tonsillectomy I was able to resume CPAP usage in 2019, and be able to be very compliant with using it as well. I have been compliant with it now for 4 years and have a very low AHI reported from my CPAP. I never once noticed a change in my chronic tiredness though. I had a big change in how much I stored from these 2 surgeries though which was nice. Today I took a look at some of my data using Oscar and it was interesting to see the data, but I was surprised to see some events almost 20 seconds without breathing but still maintaining a low AHI. I am more than happy to provide additional data too!

You have a structural leak that needs fixing. During those leaks I see many disturbances. You might have a real leak somewhere in your system and/or a non-optimized mask fit. Does your older data also show structural leakage?

Yeah it appears I have had some amount of leakage for the entire duration. Attached some additional screenshots.

I've tried upping the pressure and having it at auto and both of these haven't helped either.

Two things
You have a significant mask leak, try a new mask. And it looks like your Flow Limits are not being effectively managed. Dreamstations are notoriously bad at flow limit management. Try a different brand or Increase your pressure.
