The breaks in pressure do look like the machine turning off. You can zoom in on the pressure graph and see how long each of those periods was. I said you would probably experience lower pressure when you used the collar, and it looks like you can even drop your minimum to 9.0 if you want to. Nothing wrong with your current settings, and these are fantastic results if you can keep the machine running.
Nice to see results like this, but it's not unexpected. Having a simple tool like the soft collar that can make a big difference was something we started seeing about 3 years ago, and Melman was one of the first to show amazing results. In fact, in early 2017 he was prescribed a new Resmed Airsense 10 at fixed pressure and had familiar looking clusters of events that completely resolved with a soft collar. His experience was one that really clued us into the possibilities of solving therapy problems with this simple tool. This is early Melman:
